Red Curry Turkey Burgers and Mango Slaw

Considering our weather, I may be jumping the gun with this spring like recipe, however the mangoes bring that sunshiny feeling. My hope is to share some recipes that can be made rather quickly to get dinner on the table after a busy day. To make easier , you could purchase precut veggies and sometimes even sliced mangoes. Serve the slaw on top of the burgers. If you like, a side of rice can be served with this also.


For the Burgers:

2 pounds ground turkey

4 tablespoons Thai Red Curry paste (4 oz glass jar)

3 green onions minced

1/2 teaspoon salt


For the Mango Slaw:

2 ripe mangoes, peeled and pitted

2 red bell peppers

1 English cucumber

3 green onions, , minced

1 teaspoon lime zest

2 tablespoons lime juice

1 teaspoon honey

2 tablespoons fresh mint leaves or cilantro leaves (I prefer cilantro)

1/2 teaspoon Thai Red Curry paste

Salt to taste


1. Prepare the slaw first so it can marinate in the fridge for at least 15 minutes. Cut mangoes, peppers, cucumber, and onions into thin strips and place in a large serving bowl. In a small bowl combine lime zest, lime juice, honey, mint or cilantro, curry paste, and salt. Add to slaw and mix well.


2. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.


3. In a large bowl, combine turkey, curry paste, green onions, and salt. Mix well


4. Shape meat into patties an place on baking sheet. Bake the patties until burgers are cooked through, about 20 minutes.


Makes about 6 servings
