Small container of grape or cherry tomatoes
2 zucchini cut into 1/2 to 1 inch pieces
1 green or yellow pepper
Marinade
3 TBSP olive oil
3 TBSP grainy mustard
3 TBSP red wine vinegar
2 tsp dried thyme leaves
1 tsp salt or to taste
1/2 tsp pepper or to taste
Slice beef into cubes to about 1 and 1/4 inch thick. Place in 2/3 of the marinade in a shallow glass dish or baggie. Let marinade for 1-2 hours in refrigerator. Stir periodically. Place veggies in remaining 1/3 of the marinade.
Arrange steak chunks and veggies on skewers and grill on medium hot heat. May be served with herbed couscous, quinoa, potato, or even a mixed green salad. Bon Appetit! Lisa
