1 and 1/2 lb skinless chicken breast, (or thighs)
1/4 cup extra virgin olive oil or avocado oil
1/4 cup lemon juice
3 cloves garlic, minced
1/2 cup fresh basil, chopped
1 tsp salt
1/2 tsp black pepper
3-4 cups strawberries diced or cut in fourths (however you like to present them)
1/4 cup balsamic vinegar
1/4 cup basil, chopped
Pinch of salt
Pinch of black pepper
Place chicken in zip lock bag or shallow glass dish. Whisk together the oil, lemon juice, garlic, basil, salt, and pepper. Pour marinade over chicken and massage chicken well. Refrigerate 3 hours or over night. Heat grill and cook chicken until thickest part reaches 165 degrees F. Remove from grill , cover and let rest for 5 minutes.
While chicken is cooking, combine the balsamic strawberry ingredients in a bowl and mix well.
Spoon strawberries over the chicken and enjoy.
This can be served over a bed of arugula, or in combination with carb of choice and a couple handfuls of your favorite veggie. Right now we are eating lots of broccoli from the garden. If anyone has a broccoli recipe to share, I would love it.
